Simple Apple Cake

I hate wasting food. And yet, as a parent, I must face this challenge every day. Today, for instance, I cut up an apple for Connor to eat with his lunch. Turns out, he really didn't want the apple. I put it in the refrigerator determined not to waste it.

I considered making an apple crisp, but wasn't in the mood. Then I thought of an apple cake. I peeled and diced the unwanted apple and added two more to the pile. Waste avoided!

~ Simple Apple Cake ~

2 eggs
1/2 cup oil
1 1/2 cups white sugar
2 teaspoons cinnamon
1/2 teaspoon salt
1 cup whole wheat flour
1 cup all purpose flour
1 teaspoon baking soda
3 apples - cored, peeled, and diced

Beat the eggs and oil in a mixing bowl. Add sugar and beat. To the frothy mixture add the cinammon, salt, flour, and baking soda. Mix until combined. Stir in the apples. The mixture will be very stiff.

Spread the batter into a greased 9 X 13 cake pan. I used two small, circle cake pans so they came out thin. I solved this problem by stacking two pieces together. Bake at 350 for 40 minutes (or 30 if you use the smaller pans).

You can sprinkle powdered sugar on top of the finished cakes if you wish. I thought the cake was so delicious without any embellishments, although I do think a bit of whipped cream or vanilla ice cream would have gone nicely.

  1. MMMMMMMMMmmmm! That looks yummy! Too bad I missed out. Will have to bother you to make that sometime.

  2. found you on the dis board..chuck must love that you blog...

this cake looks great...are the apples soft or still crispy in the cake??

  3. Hi Celina! Thanks for stopping by. :)

I'd say the apples are somewhere in between - not really crunchy, but not mushy - probably closer to soft. It really is a delicious cake.

I did make some for Chuck when he was home over Labor Day Weekend. ;-)
