I am one happy woman. Football season has begun!! I am a huge Patriots fan and love to spend my Sundays watching a great game. And it's even better with some tasty snacks!
One of my favorite snacks is chips and salsa. Nothing tastes better than fresh, homemade salsa and an added bonus is that it's good for you. Here is my recipe for Fresh Peach Salsa.
~ Fresh Peach Salsa ~
3 peaches, skinned and diced
(I used white peaches, which is why the salsa doesn't look orange.)
3 roma tomatoes
1/2 small onion, diced
1 jalapeno pepper, diced
handful of cilantro, chopped
1 tablespoon lemon juice
4 tablespoons olive oil
2 tablespoons vinegar

Mix all of the ingredients together. I usually put my salsa in my mini food processor for a few spins because I like it a bit more finely chopped. Serve with your favorite Tostitos. We're big fans of the hint of lime chips in our house.
