Chocolate Peanut Butter Cookies

Today we had our first (and probably only) significant snowfall of the season. As luck would have it, the boys already had the day off from school due to testing or something to that effect. Snow fell lightly for a good portion of the day and we were able to at least make and throw a few snowballs at one another.













Once the boys' clothes were soaked through, it was time to come inside and warm up with a cup of hot cocoa and some homemade Chocolate Peanut Butter Cookies.

1/2 cup margarine or butter

1/2 cup peanut butter

1 1/4 cups flour

1/2 cup sugar

1/2 cup brown sugar

1 egg

1/4 cup of cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon vanilla

In a mixing bowl, beat the margarine (or butter) and peanut butter for about 30 seconds. Add 1/2 cup of the flour and all remaining ingredients. Beat until combined. Add the remaining flour. If you find the dough is a bit dry, add a small amount of milk (the original recipe did not call for the cocoa powder so there might not be enough wet ingredients).

Drop or roll the dough onto an ungreased cookie sheet and bake 7 - 9 minutes in a 350 degree oven. The key to soft, chewy cookies is not overbaking them. I always take mine out a little undercooked (if they stay together when you're lifting them off of the cookie sheet - then they're done). The baking time is always a guide as all ovens are different.
