Orange Balsamic Crockpot Chicken


I had planned to use the recipe for this dish over at A Year of Slow Cooking. I ended up making a few changes and thought it was really delicious.


~ Orange Balsamic Crockpot Chicken ~


6 chicken thighs, skinned removed
(I think cooking the meat on the bone adds more flavor.)

1 onion, cut into large pieces

1 large sweet potato, peeled and cut into large pieces

1 butternut squash, peeled and cut into large pieces

1/4 cup balsamic vinegar

2 teaspoons Worcesterchire Sauce

1 cup orange juice

salt and pepper


Place chicken thighs in the bottom of the crockpot. Sprinkle with salt and pepper. In a medium bowl, mix the vegetables with the vinegar and Worcesterchire sauce. Pour the veggies over the chicken. Then pour the organge juice over everything.

I'm not going to give cooking times for the crockpot because they're all different. Mine cooked this on low in about 4 hours, but mine cooks very quickly. If you have an older crockpot (the new ones all seem to cook faster), you would probably need more time on low.
