Quick and Easy Mini Pizzas

Being a homeschooling mom means that I prepare three meals a day for my family. Lunch is most often leftovers from the previous evening's meal, sandwiches, or frozen chicken nuggets. Being a navy wife with a deployed husband means that there are times when we are running very low on groceries, but I really don't feel like dragging us all to the grocery store or simply can't go at that moment.

So, what's a frazzled mom to do when the pickin's are slim and the gang is hungry for lunch? Get creative!


We make pizza for dinner often using a homemade dough. But, for lunch, I want something quick and easy so we can get back to our studies with as little interruption as possible. Mini pizzas are the perfect solution. I almost always have mozzarella and ham on hand. Pizza sauce is either spaghetti sauce or just plain old tomato sauce with a few spices added. The big question is what to use for the crust?

English muffins are a big favorite around here, but I did not have any left. What I did find lurking in my freezer were these Sandwich Thins by Arnold. I gently cut them apart and added our toppings: ham and cheese for two of the boys, plain cheese for the littlest, and Morning Star's Soy Crumbles and diced green peppers (frozen from the last good deal) for me.


In just a few minutes, I had lunch on the table. The bread had the right amount of crunch and made a perfect crust.


Those looking for another pizza crust alternative might want to try out Hungry Girl's Loaded 'n Oated Pepperoni Pizza recipe. The crust is a combination of Fiber One cereal and oats (with some Egg Beaters to hold it together). It sounds crazy, but I loved it - very filling.

  1. I cut up sweet peppers and freeze them for pizza toppings, adding to stock pot meals, spaghetti sauce too. I used to be able to find them in the freezer section already diced but for some reason our grocery store stopped stocking them but they're really not that timeconsuming to keep on hand and pack a little extra nutrition.
    Now I want pizza for lunch LOL Thanks Car! :D

  2. They had a bunch marked down one day I grabbed some and sliced and diced and threw in the freezer. Still have quite a bit left. Very handy. :)
